"Pressure Cooker" Cowboy Beans with Demitri's Steak Sauce

Demitri's Bloody Mary Seasoning Mix isn't just for drinks. We used the all natural Classic Recipe for a twist on a comfort food favorite - cowboy beans! Easy to make and ready in only 20 minutes, the "Pressure Cooker" Cowboy Beans with Demitri's Steak Sauce is full of flavor and the perfect side to pork, sausage, steak or hamburger. 

Demitri’s Steak Sauce

Yield: 6 Cups

Ingredients

  • 24 ounces Ketchup 
  • 1 cup Demitri's Bloody Mary Mix 
  • 1 cup Brown Sugar 
  • 1 1/2 cup Maple Syrup 
  • 1/2 cup Molasses
  • 1 tbsp Dried Marjoram
  • 1 tsp Ground Cumin
  • 1 cup Water

Directions

Add all ingredients in a sauce pot and reduce by half. Cool down and reserve.  Heat in a bain marie for use or serve cold.

“Pressure Cooker” Cowboy Beans

Ingredients 

  • 4 ounces Yellow Onions (small dice)
  • 3 ounces Smoked Pork Scraps
  • 1 ounce Chopped Cooked bacon
  • 1 1/2 ounce Cooked Beef Scraps
  • 1-2 Fresh Thyme Sprigs
  • 1-2 Fresh Oregano Sprigs
  • 1/2 tsp Dried Rosemary
  • 1 each Bay Leaves
  • 1 pound Dried Pinto Beans  (par cooked, drained and rinsed)
  • 6 cups Chicken Stock
  • 14 ounces Demitri's Steak Sauce (recipe above)

Directions 

In a saute pan with olive oil, saute the onions, celery, bell peppers, smoked pork scraps, cooked bacon, and cooked beef scraps. Add all ingredients, minus the steak sauce, to the pressure cooker and cook for approximately 15-16 minutes.  Release steam. Once all steam has escaped and the pressure cooker is cooled down, remove the lid. With a slotted spoon, place beans into a separate pot and try to remove excess liquid.  Add Demitri's Steak Sauce and mix with beans.  Add liquid or mash beans to adjust consistency.
